Redefine Meat, an Israeli plant-based meat company, has reached new capacity to produce its 3D printed Alt-Steak, placing the company on track to begin serving customers in high-end restaurants in Europe by the end of 2020.

The company has worked with butchers, chefs, and food technologists to develop its specialist technology for 3D printing plant-based meat by studying the “texture, juiciness, texture and mouthfeel of ‘premium beef cuts’”. CEO and co-founder Eschar Ben-Shirit explains, “…we knew that creating an alternative meat product that was both high in quality and nutrition composition would require new technologies,” noting that the sensory experience of eating conventional meat comes from its complex matrix of proteins, fats and water.

Ben-Shirit describes the company’s Alt-Steak as a food where “proteins, fats, natural colours and flavours and more are arranged in the precise manner to make them perform like the equivalent elements in a cow’s muscle.” He also highlights 3D printing’s advantage: producing the product “faster than the cow’s biology does”.
